Instructions

  1. Cook the sausage. In a skillet over medium heat, cook the sausage until browned, breaking it up as it cooks. Drain any excess grease.
  2. Assemble in the slow cooker. Add the sausage, Velveeta, and Rotel with its juices to the slow cooker. For a thinner dip, add the milk.
  3. Melt and stir. Cook on low for about 1 to 2 hours, stirring occasionally, until the cheese is fully melted and everything is combined.
  4. Serve. Keep the slow cooker on warm while serving, with tortilla chips, crackers, or sliced bread.

Notes

  • Makes approximately 12 appetizer servings. Cook time includes browning the sausage and up to 2 hours on low in the slow cooker.

  • For a spicier dip, use hot Rotel or add diced jalapeños.

  • For a creamier texture, stir in 4 oz cream cheese.

  • No slow cooker? Melt everything together on the stovetop over low heat, stirring often.
