Ingredients
Instructions
- Cook the gnocchi. In a large pot of salted water, cook the gnocchi according to the package directions, usually 2 to 3 minutes. Drain and set aside.
- Sauté the vegetables. In a large skillet over medium heat, heat the olive oil or butter. Add the onion and cook until softened, about 3 minutes. Add the garlic and cook for another minute, until fragrant. Add the mushrooms and sauté for 5 to 7 minutes, until golden brown and they’ve released their moisture.
- Add the spinach and cream. Add the spinach and cook until wilted, 1 to 2 minutes. Pour in the cream and stir. Simmer for 2 to 3 minutes, until the cream thickens slightly.
- Add the gnocchi and Parmesan. Add the cooked gnocchi and gently stir to coat it in the sauce. Sprinkle in the Parmesan and stir until melted. Season with salt and pepper.
- Serve. Garnish with parsley or basil if you like, and serve hot.
Notes
- Pairs well with a simple green salad or garlic bread.
