Ingredients
Instructions
- Preheat the oven to 425°F. Line a sheet pan with parchment paper and lightly spray with nonstick cooking spray.
- Add 1 tbsp avocado oil to a large pan or cast-iron skillet over medium-high heat. Add the onion and a pinch of salt and pepper, and cook for 3 to 4 minutes, until the onion has softened.
- Add the ground turkey and garlic. Cook for several more minutes, until the turkey is cooked through.
- Add the green chiles, taco seasoning, salt, and pepper. Mix to combine. Reduce the heat to low.
- Add the cilantro, lime juice, and 1 cup of the cheese. Stir to combine and melt.
- Place the tortillas on the prepared sheet pan.
- Add a few spoonfuls of taco meat to each tortilla, covering just one half.
- Cover the meat with another sprinkle of cheese. This acts as your “glue” to hold it all together.
- Fold the other half of each tortilla over and press gently to seal.
- Brush the tops of the tortillas with the remaining avocado oil to help them crisp up.
- Bake until golden and crispy, about 12 to 15 minutes.
- Serve with toppings of your choice.
