Make the egg mixture
- Preheat the oven to 375°F.

- Stir in the pepper and salt (if using).
Cook the vegetables
- Heat the olive oil in an oven-safe skillet over medium heat.
- Add the onion and cook 3 to 4 minutes, until softened.
- Add the spinach and cook until wilted, about 1 to 2 minutes.
Assemble and bake
- Pour the egg mixture evenly over the vegetables in the skillet.
- Sprinkle the feta over the top.
- Cook on the stovetop 2 to 3 minutes, until the edges begin to set.
- Transfer the skillet to the oven and bake 12 to 15 minutes, until the center is just set.
- Let rest 5 minutes before slicing.
Make the side salad
- Combine the greens, tomatoes, and cucumber in a bowl.
- Whisk together the olive oil and lemon juice or vinegar.
- Toss the salad lightly and season with pepper, and salt if needed.
Serve
- Slice the frittata into wedges and serve with the salad on the side.
Notes
- Keep the feta moderate to manage sodium.
- Use minimal added salt and rely on herbs and lemon for brightness.
- For added fiber, serve with a small portion of whole grain toast or farro.
